Melted tablespoon bacon grease with canola oil. Sliced potatoes. Put in microwave for three minutes. Poured fat/oil over potatoes and tossed. Put the potatoes in a non-stick cast iron frying pan, covered. Turned once in awhile until potatoes were cooked all the way through. Scrambled eggs, added diced fresh tomato, diced ham, shredded mozzarella cheese, pepper, garlic powder, and onion powder. Poured over potatoes and covered. Cooked on low for about five minutes, uncovered and stirred once, re-covered to cook another five minutes. Uncovered, put a little shredded mixed cheese over top and put under broiler until cheese started to brown. Took out, sprinkled with snipped parsley. Will refrigerate leftovers for tomorrow after dogs and I get back from vet.
