Kate, it's certainly a Dendrobium similar to mine, and the cane/stem is the same. I'm thinking in spring we may see leaves on them i.e. probably new canes.

Tara, my eyes aren't all that great, but I'd look at that little growth with a magnifying glass and a pair of sharp tweezers. The white thing on top looks like it could be a bug to me. Mealy bug, maybe? You could 'test' it very gently with something like a needle or pin to see if it's soft. If it is, it's a bug. My Phals are starting to pop some stems and they're firm, shiny and green on top, not white.
