Here's a nice quick recipe that's real good. Made this yesterday.

Split some English muffins and smear about a tablespoon of peanut butter on each side.

Take an apple and slice it real thin. (you can leave the skin on if you like, I didn't) and place them on top of the peanut butter

Mix 1/2 cup of sugar with 2 tablespoons of cinnamon and sprinkle it over the muffins.

Place the muffins on a cookie sheet into a preheated 350 degree oven and bake for 10 minutes then turn on the broiler and broil until the peanut butter is all gooey and the supples get a bit crispy but don' t let them burn.
