I have grown Sedum from seed, but in your case, just be aware that your seed won't likely come 'true' and you may get some variations. That's how Voodoo came about as a seedling of Dragon's Blood.
It's a bit late in the year to seed them now, so maybe wait until the spring, or if you have a cold frame you can winter sow them. The seedlings are really tiny! And you're right, they are much more trouble than cuttings.
I usually do them in March or April in rows in an open flat, using Sunshine mix or other well draining sterilized potting soil, and I've had good success with sprinkling turkey grit along the row so it maintains the moisture level while still allowing good drainage.
