I just googled I'itol Onions. (pronounced "e-toy")
What came back is these onions were introduced to the Tohono O'odham native Americans around 1700. They, the Tohono's, who were accomplished farmers, grew them along the Gila and Salt Rivers with great success.

The Slow Food Movement has red listed them as endangered. The author of the article I read said that they have an over the top complex flavor.... (I know that I like them).

It went on to say that these onions will develop shallot size bulbs under the right conditions and the young tops can be harvested and used as chives. The green tops will shrivel and disappaear in the hot summer months but the monsoon rains will have them back again in the early fall.
