Ah - pardon my jumping in here, Neal, but I have an answer for that... interestingly, spread your potatoes out on a shelf, table or whatever where they get some light (preferably in a relatively cool area)... in the dark they get long sprouts, but in the light the sprouts stay short, and it doesn't matter that the potatoes get a little shriveled. Just one more thing that I've learned in the last few years.
