This American bamboo Society website will let you search for bamboo varieties based on height, cold hardiness and shade, but not drought tolerance.

Unless you're familiar with bamboo and know how to contain "running" bamboo, you probably want to limit yourself to "clumpers" only. I sure did!

I'm guessing North Dallas is around Zone 8, and hence your winters often get to 10 or 15 F. If i call, the ABS filter will filter out bamboos that would have leaf damage after a brief exposure: NOT a root-kill. So you could look for varieties that are only "hardy" down to 15 or 20 F and accept some leaf damage in an average year.

I would pick 0 or 5 F, and limit myself to plants that would hardly ever get even leaf damage. But you also want TALL ones ...

Bamboo could take 3-6 years to reach their maximum height for your location.

I found many with height >= 25 feet, "cold hardy" to 15F.
No clumpers were listed that were cold hardy to 10 F and 30 feet tall.
