Cinnamon trees are tropical, so they would require a very warm climate (9B or higher), but possibly a greenhouse would do. As far as the different kinds of cinnamon spice sold, the only place here that sells different identified kinds of cinnamon is Whole Foods. Almost all stores only sell cinnamon labelled as "cinnamon" and normally is always some form of cassia, but who knows what kind? Right now I'm using Korintje and Ceylon cinnamon from Whole Foods.
