I don't think you could "see" good viability. You could see bad seeds when they turn black or mushy, or some other unhealthy look. But then, I don't have experience with adenium seedpods, only what I've learned online: the hairs need to be removed from seeds before planting. If you had removed them before planting, then

Also, viability has to do with age of the seeds--freshly harvested has a super high chance of germinating. But there are other factors to consider as well, and these involve pollination and such.

(p.s.) Just before maturing, tie or put a piece of nylon stocking over the seedpod to keep seeds from blowing away.
