It's pretty clear you did not buy from an orchid grower but a florist outfit. His directions are just nuts and the price you mentioned before should have clued you in that they know nothing about the orchid business. When you are a newbe get with a society whose members can help you. Brassias are not expensive. Don't pay out the kazoo for learning plants.
Pull up American orchid society and go to 'Orchid Mall' for a vendor list and I think there are a few in your area even. Always start small till you get your wings and good luck next time.
