Lemon Bars:
Crust:
1 cup butter
2 cups flour
1/2 cup powder sugar
Stir the flour and the powder sugar together
Melt the butter then add the powder sugar flour mixture, mix well,
Press in a 9x13 baking pan bake at 350 for about 15 to 20 minutes (keep a eye on it so it does not brown too much) When I was given this recipe I was told not to preheat the oven and bake for 20 to 25 minutes.
Lemon topping:
4 egg, beaten
1/2 cup lemon juice (I use fresh lemons)
1/2 teaspoon baking powder
2 cups sugar
1/4 cup flour
Beat 4 eggs, sugar, and lemon juice together a
Sift together together the flour and the baking powder into the egg mixture
Pour over the baked crust and bake for 25 minutes
Sprinkle with powder sugar and cut into squares when cool
