Hi Zah, Welcome! to All Things Plants!

I'm not knowledgeable about the growth habits of the different cultivars of Spider Plants and when I googled I couldn't find any description of the Spider Plant (Chlorophytum comosum 'Ocean') as having ruffled leaf edges.

I'm not sure why the new leaf growth on your plant isn't ruffled unless perhaps the plant is reverting back to the original form, if that's even possible. I think member @JB grows a few different types of Spider Plants so hopefully she will see this post and be able to offer advice.
