Here's one of my favorite Rhubarb Custard pie recipes

3 Eggs Beaten
1 Cup sugar
2 T soft butter
1 Cup half and half
pinch of salt
2 T flour
3 Cups of rhubarb cut into small pieces.

Pour into an unbaked 9 Inch pie shell and bake at 350 for about an hour or until a knife inserted comes out clean.

Here's another rhubarb pie I like.

4 T butter
3 Cups of diced fresh rhubarb
1 1/2 Cups sugar
6 T cream
6 T additional sugar
1/2 t salt
4 T cornstarch
3 egg yolks well beaten
1 "Baked" 9 inch pie shell.

Procedure:
Melt butter in saucepan and add 1 1/2 cups sugar and the fresh rhubarb. Cook until tender.
Combine the rest of the ingredients and add them to the rhubarb. Cook and stir until thick. Pour into baked pie shell. Chill thoroughly. You can top it with a Meringue, or serve it plain with whipped cream.
