So true, Carol. I even had a plumeria come back after being frozen all the way to the ground! Their stems are full of water so I was sure it was dead, but sure enough it sprouted and grew new leaves from the base that year.
Unfortunately, it got hit again the next winter, its mother didn't cover or mulch it
it and it didn't come back again.
