The NuMex Big Jim is listed in the Guinness Book of World Records as the producer of the largest Chile pods ever grown, with specimens in excess of a foot long (12 inches) not unknown. The variety was developed in the mid 1970's by Dr Nakayama as a result of a breeding program at the New Mexico State University (NMSU), home of the Chile Pepper Institute. Up to 30 pods may grow on a single plant. Great for chili powder.

This was the first ornamental variety released from the New Mexico State University (NMSU), home of the Chile Pepper Institute. intended for growing in small containers. It was released in 1988 to celebrate NMSU's Centennial celebrations. Many seed companies offer seed of this cultivar, unfortunately, under different names. 'NuMex Centennial' has purple flowers and purple foliage. Very similar in appearance to the Bolivian Rainbow.

Sunglo is a nice edible ornamental variety that produces good yields of 3 ¼" long by ½" wide hot chiles. Pods are erect and mature from green to a bright yellow. This is a nice variety for adding color to cooking and a colorful hot chili to brighten the home or garden.

This cultivar was released by the New Mexico State University's (NMSU) Chile Pepper Breeding Program in 1991 and named in honor of Mr. Alton L.Bailey, NMSU's extension vegetable specialist who helped evaluate this selection. NuMex Bailey Piquin is unique because the fruit falls from the stem at maturity, making harvesting easier.
The wild chile pepper Pequin grows primarily in Guatemala, Mexico, and the southwestern United States. It is sometimes called the "mother of all peppers" because it is thought to be the oldest of the Capsicum annuum species. Historically, no kitchen table of Sonorans, Opatas, O’odham or Yaqui rural homes would be without a bottle of dried chiltepins. The wild harvest is a seasonal ritual in many rural communities to this day, where families make chile-harvesting camps in the mountains during the heat of September and early October in order to harvest the wild peppers.

Tabasco peppers are the only types of Capsicum frutescens that are well known in North America. These fiery little jewels are the primary ingredient in tabasco sauce, the famous hot sauce that has been produced in southern Louisiana since 1848 when the peppers were first imported from the State of Tabasco in Mexico. Growers today cannot keep up with demand and tabasco peppers are imported from Columbia and Central America to be mashed in Louisiana. Originally from somewhat swampy regions it prefers hot and humid conditions for maximum productivity.
