Have had this one for about 2 months, I water it once a week and it sits facing an eastern facing bay window and the lower leaves seem to be dying? Succulent is very easily dislodged from soil, seems like the roots aren't that developed yet? What's going on?

To save him ! Get to work of cutting all the rotten stems off bottom and let harden off several days.and re-pot him ! I only water mine every 6 wks!
Bottom water only ! If he gets to dry his leaves will start to wrinkle/shrivel just a bit.
Then water him. AND !#pow# 🙊
He'll puff right back up !😎!
Use some catus mix soil #!!!

This is a Sempervivum and would do much better living outdoors planted in well draining or mounded soil to avoid wet 'feet'.

any tips on taking care of them? they seem to be doing okay...though the howarthium seems to be a little brown on the underside of the bottom leaves. All three succulents are under the same conditions/watering schedule. I am a Zone 7a (i believe)

Sempervivums survive outdoors fine, even in cold areas. They're definitely not houseplants.

It looks like you have a few problems! If your satisfied they are getting enough light then its prob overwatred! Do the pots have a drainage hole? When I started collecting succulents they where always in glazed pots with no holes! It looks nice but its just a marketing tactic, they need excellent drainage, a good source of light and low humidity. Your echeveria looks like its struggling, get it out of the pot and remove as much damp soil as you can and lay it on some newspaper for a few days til it dries out then repot into a better draining soil and add some pumice, perlite, course sand/grit/stones anything that will improve drainage and make sure to use a pot with drainage holes!
Your haworthia looks fine to me, is the lower brown parts mushy? Again with the newspaper! If its still firm then it could just be discolored, I would raise it abit so the lower parts are getting more light and have better air circulation! I'm just a newbie but hope this helps!
