I bought this plant last year and I love it. I have no idea what it is though. I would also greatly appreciate any tips on how to trim it. If I trim to short it kills the vine and too short makes a new one grow out of the side crooked.

It's Peperomia ferreyrae. Trim it most anywhere you want, you know about how far is too far. It will always "kink" where you cut it, but in time it won't be that noticeable. Yours could probably use a little more light to help it grow more compact but not too much more.
