How can I set plant logs and plant events to private?

Explain your question. Are you trying to create a privacy fence?
Maybe it takes a long time to grow, but remember that if nobody plants it, nobody has it.

You need to create a "Category" (or several) and set it to private. All the plants that you want to remain private need to be placed in that category.

Danita is correct - if you want particular plants (and associated events, etc.) to be private, then you need to create a category for them and set it to private.

Any plants in a private category/list won't be visible to anyone else (even if they are in another public list as well) and the events will be private.

Is there a way to move a plant from my list into a category or do I have to just delete from my list & add to my category?

If you create a new category, then just click the edit for the plant you want moved and place it in there. See my profile for the categories I have created.
