Broccoli and Cauliflower started bolting earlier than expected. Is there a way to slow the plant(s) down to prolong harvesting times?

Wow! I can't imagine that these are already bolting! I just planted mine! Where are you? What zone? How long have they been in the ground? I'm not familiar with Toloosa St/Hobart…More information may be very helpful...

My broccoli was planted in September and it is how just getting large enough to begin putting on "heads". We have had several mornings with tempts in the mid-20's and the broccoli looks fine, as does all the onion and garlic plants. We have certainly had a lot more cold weather in the late fall than I can ever remember. I think it was mid-December last year before we even got down to freezing. We have now had 6 mornings in the 20's and will have (at least) two more mornings at or below freezing mid-week.
