I made a big batch of chicken broth with a ton of veggies from a local farm, with the intent of canning it. The first batch I did was no problem, the second batch was done at a higher psi. I was wondering if a higher psi would cause an issue with the second batch, or if it would be fine.

The only effect of a higher PSI would be a breakdown of the tissue of the vegies I would think. Maybe making it a bit mushy?? Otherwise they should have pressure sealed just fine with the higher PSI.
