My husband loves the stuff. I like it but not as much as he does. It's just us two so I freeze the corn on a small scale. I cooked 3 dozen today in the pressure cooker, cut it off the ear, and added about 1 T of butter for every two ears. I have 12 bags cooling and waiting to going in the freezer.

Anyone else?

Yep, freezing corn here, too. Did only about 3 doz. ears a few weeks ago, but they were so small, with such shallow kernels, that I felt like I hardly got anything for my trouble. Did about 5 doz. more ears this week, and they were much larger ears. I buy it all from a local lady, and she said this was a better variety for freezing, too. Wish I could remember the name! I peeked in my freezer, and think I still have about 10 pint freezer boxes left from last year, which is just unheard of. Guess that is what happens when I freeze corn together with my mom, and she manages to send me home with a lot more corn than I usually put up! It was the first time we've done it together in about 20 years, so it was fun to relive those old memories!

Does anyone here put a salt-water solution in their corn? My mom does, and swears it helps prevent freezer burn and prolong how long it lasts in the freezer. I don't care for the taste, myself (which is odd, because I tend to salt my corn lightly before eating it), so I left my boxes of corn "naked." LOL

I bet that was fun to do corn again with your mom Lovey dubby

We have a couple places we buy corn...the guy on the corner at Walgreens, or on the side of the road outside a small town called Moville. But, we were in a hurry and thought the stuff at wally world looked good so that is what I cooked yesterday. My husband may still make a trip out to Moville.

I normally do add a tiny bit of sugar, salt, and even a little pepper, but this time it is just the butter. We'll see if I notice any difference in the quality after being frozen.

The other half does some times when I have a large sweet corn yield, she blanches in salted water first. I tip my hat to you.

I freeze a good bit every 3 years. I rotate growing yellow corn for freezing, white corn for fresh eating, and popcorn. I don't have a big enough garden to plant both popcorn and sweet corn in the same year. I constructed a thing this year for freezing corn in vacuum seal bags. It has to be frozen in an open bag before it can be vacuum sealed. It worked great. Here are pics. Notice the nifty funnel my son 3D printed for me. The jig holds 16 bags. Took 6 dozen ears to make 16.
