White Chocolate Raspberry Bundt Cake

1 pkg white cake mix (I like the French Vanilla mix)
1 instant white chocolate pudding mix (3.4oz)
1 cup sour cream
4 large eggs
1/2 cup water
1/2 cup oil
1 1/2 cups white chocolate chips
1 cup raspberry pastry or pie filing

Instructions

Grease and flour bundt pan and preheat oven to 350 deg
In large mixing bowl, combine cake mix, pudding, sour cream, eggs water and oil. Mix until well combined. Stir in choc chips after prior ingredients have been combined. (also works well with or without the chips-yes I have forgotten them before and it turned out great)

Fill bundt pan with 1/3 batter and than spoon in 1/2 of raspberry filling; use knife to swirl in rasp filling into batter. Pour in 1/3 batter and repeat process, than top with remaining batter.

Cook in oven at 350 degrees for 45-50 minutes. Remove from oven and let 10 minutes than remove from pan.

Texas Roadhouse Rolls
Ingredients:
2 cups milk
3 Tablespoons butter
1 Tablespoon active dry yeast
1/2 cup warm water
1/2 cup sugar, divided
1/2 cup honey
7 1/2 cups flour (up to 1/2 cup more or less), divided
2 eggs
2 tsp salt
Butter
For the Honey Cinnamon Butter:
1 stick (4 ounces) unsalted butter, at room temperature
1/4 cup powdered sugar
1/4 cup honey
1 teaspoon ground cinnamon
Directions:
1. Put milk in a small saucepan over medium heat. Bring to a boil and remove from heat. Allow to cool slightly. (Or you can heat it in the microwave until boiling, about 3 minutes.)
Melt 3 Tbsp of butter in the microwave. Set aside.
2. Combine yeast, warm water and 1 Tablespoon sugar in a mixing bowl. Allow yeast to bubble.
3. Add remaining sugar, honey, milk, and 3 1/2 cups of flour to the yeast mixture. Mix together for a couple of minutes.
4. Add melted butter, eggs and salt; mix well.
5. Add additional flour 1/2 cup at a time until dough begins to separate from the sides. Let rest for a few minutes.
6. Knead dough for about 5 minutes. Add additional flour by the Tablespoon if dough gets sticky, but should be moist. (Don't dry it out.)
7. Remove dough from the bowl and grease the bowl. Return dough to the bowl and turn it over so all sides are covered in grease. Loosely cover bowl with greased plastic wrap. Allow to rise until doubled in size, about 45 minutes, depending how warm your house is. (I put mine in the microwave that was warm from heating my milk and butter.)
8. Once the dough has doubled, punch it down to release the air. Empty dough onto a lightly floured work surface. Using a rolling pin, roll the dough out till it is about 1/2-inch thick.
Fold the dough in half, so it's now about 1-inch thick, roll over the dough a little bit to seal the two halves together. Cut the dough into approximately 2-inch squares.
9. Place dough onto a greased baking sheet and cover loosely with greased plastic wrap. 10. Allow to double in size again, about 1 hour.
11. Bake at 350*F for about 15-20 minutes, until golden brown.
12. Immediately rub the tops of the rolls with additional butter. Best served warm. Store extras in a zip-top bag.
For the Honey Cinnamon Butter:
In the bowl of an electric mixer fitted with the whisk attachment, beat the butter for 30 seconds, or until pale in color. Add the powdered sugar, honey, and cinnamon and beat until well combined, light, and fluffy, about 1 to 2 minutes. Serve immediately or store, covered, in the fridge for up to 5 days. Bring to room temperature before serving.
Serve the rolls warm with the cinnamon butter.

Now if there was some ice cream to accompany that cake, that would be perfect!

@ChefDebbie I had the Raspberry Pound Cake from the freezer after dinner. It was just as good as the day it was baked! ( @Missingrosie 's recipe with a twist) There is some Trader Joe's Cookie Butter Ice Cream in the freezer. But that is a stand alone ice cream that needs no accompaniment.

I'm gonna get the stuff tomorrow to make the raspberry pound cake. I love anything raspberry! I usually try not to keep sweet things in my house, to remove the temptation of over doing it, but right now, am kicking myself for not getting something sweet earlier when I was at the store! D'Oh!

As that goes, Trader Joe's Cookie Butter could be a stand alone meal that needs no accompaniment but a spoon!

Lemon pasta

Ingredients
1 pound spaghetti
2/3 cup olive oil
2/3 cup grated Parmesan
1/2 cup fresh lemon juice (about 3 lemons)
Salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves

Directions
Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.

Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.

My Mom made apple fritters too, but she peeled the apples, then sliced them "across"...........so we had rounds. Cut the core out of each slice, dipped in the batter, and deep fried. Drain a bit, then sprinkled with granulated sugar. Nirvana............. We always used Wolf River apples, because there was a tree up in the woods. They were SO ginormous and made the most wonderful fritters.
