hi, my mom brought these yesterday and today i checked, it looked a lot like echeveria parts in it and aloe vera, but i was wondering if someone could tell me how to take care of it and what kind of plants are these

The purple one is Tradescantia pallida.

The rosette one in the front looks like an echeveria and should not be in water. It should be potted in a loose cactus type mix.
