Do we have the ability to do text in color?

Not in the forums, no. I purposely left that out because I can only imagine how distracting the forums could be if everyone could make their text any color they want!

at least we can do bold, italics and underline so that helps for making something stand out without the extra colors.

Ok, I've added it for tree mails. But if people get report irritation by receiving colorful mails then I may have to remove it.

Do it like this:

[ color="Red"]This will be red.[/color]

It works with any color name or hexadecimal html color value like #acacac.

I tried it and I couldn't get it to work for me.

Worked fine for me in a tree mail to Vic. If you are copying Dave's example above, you need to remove the space right after the first bracket. He left the space to show how it's done.
