I love beets roasted..also eggs pickled with beets. I was going to say that I love all veggies, then I thought of that kale...okay, maybe I should cook some and try it. Definitely don't like cauliflower...have to admit that I've never tried rutabagas or parsnips. I think I'll try roasting them with the beets. Seriously, a big pan of beets, onions, carrots, Brussels sprouts, broccoli, asparagus drizzled w/ olive oil and salt and roasted, really, really good. Leave out whichever veggies you don't like....
