I hope it works for you, Reid -- the only time I tried growing sweet potatoes we had a very cool and rainy summer and they didn't produce anything usable... Maybe La Nina will work in your favor this summer
You did inspire me to stick one that I had sitting around a little too long into a glass of water to grow the vines for an ornamental plant. And, of note, the leaves and vines are edible, too
