If ornamental, one can keep taking cuttings off of that mama potato as they grow from it. It will keep growing more until it becomes ill or finally runs out of energy. If desired, the whole potato can be put in soil, with or without any foliage at the time. Cuttings take off most easily for me if given 2-4 days in water for roots to start to form, then put in pot or ground. I had it coming out of so many hanging porch pots a few summers ago, it was like sitting behind a curtain of foliage.
Produce-section potatoes (where there's just 1 kind available) are almost surely going to make plain/medium green leaves. For more interesting leaves, one can look for a store with more varieties of potatoes for sale, which may or may not have more unusual foliage. But since they're so inexpensive when sold as ornamental annuals, I prefer to buy already growing plants. The leaf appearance is a known quantity that way, for very little difference in price.
Those that are sensitive to getting a rash from latex sap should be careful when "playing with" sweet potatoes (Ipomoea batatas,) or any other Ipomoeas (morning glory, moonflower vine, cardinal creeper, so many nicknames for so many diff Ipomoeas...) to avoid contact with the sap &/or wash as soon as possible after contact. Ipomoeas have latex sap also.
