Tin these tree's are very hardy. There are many things done to them. We can watch them through video's. I have seen different colored roots from different trees be grafted on to the other so you see a big color difference of light and dark roots. I have seen them be manipulated into shapes like lions and fantasy shapes. Some of those are even painted for more effect.
Most competitions overseas will graft onto very old stock. The roots and or branches must be perfect to be excepted. If you can think a shape they will attempt it. Most of these people use crazy glue for the graft.
Sounds like you are wanting to play with your plants. I have to wait till next Spring since my season is so short. I have older root stock. I have young 9 month or so trees for scion use. Now It is just getting them all to get comfortable and established in their new homes. Being patient has never been my thing. I just want the shapes I see in my head to show in my tree. I will wait.
