No don't cover it at all.

Put it skin side down in smaller pan. Add onion soup, add some water, now it should be covered by the liquid. Cook about 2 hours at 325-350. Turn over so that the skin is up and let brown. Watch the liquid content, you might have to add water. Once you turn it you want the liquid to be low enough that the skin side can brown some. It won't do that if the water is covering.

It is really easy to do. And I love how it tastes.
