Ideal, Rita. That's how I cook them.

We went out to celebrate and had a good time.

I did nothing for New Years. I didn't even stay up to watch the ball drop at midnight. Shrug!

Found a nice new recipe which I will make again. I had sweet potatoes I wanted to do something with. It was easy, healthy and delicious

I did add a bit of a roasted pepper relish on the chicken when I served it.

My husband hurt his leg last night, pulled a muscle in his calf. It's swollen and possibly torn. We spent the day in the ER, then running around trying to get a prescription filled on a holiday. Exhausting

For dinner I'm making my Mother's "hash". It's sort of a hamburger stew. I'll throw in some of the veggies leftover from the veggie tray I made for last night. Tasty.

Sadly, he hadn't even had a beer yet. We went to our neighbor's house and forgot to bring something. My husband came home to get it. The weather was cold so he ran, missed their front step, and overstretched his calf. It's swollen and painful . The CAT scan showed inflammation, cannot rule out a muscle tear. The nurse practitioner prescribed some muscle relaxant so hopefully that and some ice and Advil and elevation.... will help.

Hubs is making one of my favorites: pig feet paksiu. Hilarious! I know...many of you will roll your eyes. The gelatinous ligaments cooking in ginger, vinegar, soy sauce, kitchen bouquet, and garlic is far out the way my hubs makes it. Drooling

Hope your husband's calf feels better, Karen. Pulls just aren't fun.

Rita - we don't stay up to see in the new year either.

The best New Year's Eve for us was when I won a trip to Pasadena, the parade and football game, etc. We were back at the hotel before 9 PM since we had to be on the bus to go to the parade by 6 AM. Close to 9 PM we heard the commotion from the bar and saw the ball dropping in Times Square. What a delightful way to start the day and celebrate our 14th anniversary.

Happy New Year and blessings for recovery and good health all around.
It was a fine dinner of beef short ribs served over egg noodles last night. Tonight it's Buffalo chicken wings and a light salad. Good eats to all.

Chicken thighs for me tomorrow as I only took mine out to thaw this afternoon. Tonight I had fish N chips. Yummy. Just use frozen steak fries and the pre made breaded fish fillets.

Put a little oil in a pan, add whatever you put in a coleslaw, I use a coleslaw mix, add onion, mustard seed, parsley, sugar, salt and pepper, a little cayenne to spice it up, add a little white wine vinegar, or what every kind you prefer and cook for a few minutes, stirring it up, it is yummy.
