Karen, I use this recipe as a basis, but make a few changes

I change it up:
Use 2 bottles of Guinness draught
Use less broth
Sub dried for fresh thyme 'cause that's what I had
I add a couple of diced potatoes instead of serving on mashed ones
I also added diced turnip, parsnip
It makes for a good hearty meal on a cold wintry night.
