Hi! Welcome! back! May this week be one of your best weeks ever!

Today I have a tidbit for you! It started with wanting beans for a Mexican Dinner. I just did not feel like making refried beans. My daughter looked on the internet and found black beans on Pinterest. I made my own version of a recipe and it was a hit. It was like a coarse guacamole with black beans stirred in. After we had it a couple of times as a side, I thought this should be adapted into a cold pasta salad. It can be a summer meatless lunch or add some leftover cold grilled chicken for a whole meal. FAST and EASY and INEXPENSIVE. Start to Serve in less than 14 minutes!

12 oz bowtie pasta
15 oz can black beans
1/2 of a purple/ red onion chopped
2 to 3 Tomatoes cut or equivalent of grape tomatoes (cut in half)
2 ripe avocados
I/2 large lime or I small lime. Fresh.
Fresh Cilantro 2 Tablespoons
Garlic olive oil (I use spray, but it can be homemade)
Garlic salt and pepper

Start pasta water. Once the water is on start the prep work. When it's boiling add the bowtie pasta. Cook ala dente for about 8 minutes. Meanwhile open, rinse well and drain one can of black beans. Put in bowl. Add chopped purple/ red onion. Add cut tomatoes. Season with garlic salt and pepper. Drizzle some garlic olive oil over mixture. Squeeze juice lime juice over. Add chopped cilantro, I try not to use stems because they are bitter, mainly leaves. I also use scissors to cut herbs-- wash, dry , roll and snip, snip. Mix or toss.
Remove stem piece and cut avocado in half. About now drain pasta, add ice cold water to cool pasta off. Drain. Add cooled pasta to top of bowl season with garlic olive oil, garlic salt, and pepper. Stir. It will look like bowl picture. Use spoon to remove avocado halves. Sprinkle with garlic salt and pepper and dice. If serving the whole bowl of salad at once throw in all the avocado just before serving and mix. If not using all the salad cut up only one avocado to divide. Add some avocado to each individual serving. Without avocados pasta can stored in the refrigerator for 1 to 2 days.

Reads like alot of garlic salt and pepper. I sprinkle it in as I go to use less because it is better distribution.
A quick easy meal is always a good thing especially when there is alot of garden work to do.
