Now for the most delicious salad ever!
Watermelon Salad
I used organic Half and Half salad mix which contains the following-- 1/2 Spring mix and I/2 Spinach
Girard's Champagne dressing
Sliced almonds
Feta cheese Crumbles
Red onion diced
Watermelon diced , a sweet juicy one is best but who would want less from a watermelon.
The only secret is that I put the salad mix in a covered bowl add a little dressing and shake it up. Shaking coats it like spritzing, so you can use less dressing. All other toppings are sprinkled on top.
Only shake salad right before serving because it wilts. All parts of the Watermelon Salad keep separately in the refrigerator. Assembly is a snap as long as the watermelon in cut ahead of time. Great for lunch with baguette bread.
There are other versions using mint and arugula. This is what we had and used. I did ask my daughter's opinion and she said it did not need the mint and my choice of salad was good. This works for us
