Margaret's Sugar Pie Smiling

1 cup light brown sugar
1 cup white sugar
3 tbsp all purpose flour
2 large eggs at room temperature
1/2 cup heavy cream
3 tsp maple extract
1/4 cup melted butter
1unbaked pie shell

Combine sugars & flour and blend well. Add eggs, cream and maple extract to the sugar/flour, mix well, add melted butter, pour into unbaked pie shell.

Bake in pre heated oven at 450 for 10 minutes, reduce oven to 350, bake 25 to 30 minutes, or until done. If it looks like it is browning too much reduce the heat. Timing will depend on your oven.

I use the pastry recipe on the Crisco shortening box with the egg and vinegar, but use 1/2 cup of shortening and 1/2 cup of butter and add 1 rounded tbsp of powdered sugar to the flour, it makes a very tasty crust and is very forgiving. Big Grin
