Either plain or flaky pastry may be used for lining the patty tins for the tarts

Prize Butter Tarts

1/2 cup butter
1 cup sifted brown sugar
2 tbsp cream
1 large egg, beaten
1 tsp vanilla
1/2 cup currants

Mix ingredients together and place spoonful of the mixture in patty tins that have been lined with rich pastry cookie dough. Bake in hot oven at 450 for 8 minutes; reduce temperature to 350 F and bake until pastry is delicately brown.

I haven't made these in years, when my kids were little they were a favorite treat.
