I picked up a Carl this year in October (for a $1). It wasn't floppy. I don't remember it being particularly red, but we'll see what it does in the garden next year. It's under 8 inches of snow at the moment.

If those stems are arching, then that would be Red Cauli. Keep in mind that my sedums don't flop much because they get very very little water. Here's Red Cauli:
