I sold all the loaves at work. Green Grin!

Russian Black Bread

2 cups black coffee
1/3 cup veg. Oil
1/3 cup molasses
3T. Brown sugar
1 1/2 cups rye flour
1 1/2 cups whole wheat flour
3 cups bread flour. ( will take more in mixing
process)
3T cocoa powder
2 teaspoons salt
1T yeast
3 eggs

Mix as for bread. Let rise. Form into 3 loaves, let rise again. Bake at 375 for 35 minutes. (Experience has shown that this is TOO LONG in my oven; check after 20 minutes and go from there), My oven is generally right in the temp.....I check it with a thermometer. I also brush with melted butter when I take the loaves out of the oven. It's a personal thing. I don't like crisp crust, I like the soft, chewy crusts.
