I meant to share..
I often roast potatoes ahead of time for breakfast

Well, sometimes they are crispy and sometimes they ain't.
I know I tend to pack too tight ( they steam ) ..and so I went out and got some of the large turkey sized foil pans

I cubed russet potatoes and soaked for 45 minutes in cold water
Then I drained well and poured out onto a towel and patted dry
Preheated the oven to 450
Melted a stick of butter in the pan
Tossed the taters in the butter with some seasonings
Turned the heat down to 350 and roasted for almost an hour
Topped with some coarse salt


Perfect!! Crispy !!! And soft and flakey inside

I neglected to photograph.. this is the veggie eggs I fixed today
