I'm a believer that everyone should always have exactly what they want on their birthday soooooooooo........with that in mind I have two very easy NO FRY NO MESS 'fried chicken' recipes for you! nodding One is 'keto/low carb' and one was given to me by a friend who originally grew up in the South but had to find a 'healthier' way to satisfy her fried chicken cravings. When I first had her chicken I swore up and down it was deep fried but it never touches oil!

LOW CARB/KETO 'Fried Chicken'

3lbs of chicken pieces; washed, cleaned and patted dry
1/2 cup all purpose flour seasoned to your liking (garlic salt, onion powder, cayenne pepper, paprika, sage, etc.)
1/4 cup very finely grated Parmesan cheese * optional
1/2 cup butter; melted

Preheat oven at 450 Fahrenheit
Mix all seasonings and flour together and cheese if using, in a plastic bag. Shake 2 or 3 chicken pieces at a time and repeat until all chicken is coated.
Melt the butter and coat a 9" x 13" baking dish with the melted butter. Put the chicken in it skin side down. Bake at 450 for 20 minutes.
Turn the pieces and then continue baking for 20 minutes more or until finished and cooked through.

6 servings at 460 calories per serving; fat 32.6 G; carbs 8.2G;
Protein 31.9G


SOUTHERN NO-FRY 'FRIED' CHICKEN

3 lbs. chicken pieces; washed, cleaned; dried and very lightly dusted with flour
1 cup seasoned bread crumbs (any type of 'crumbs' :Panko, cracker, bread or a mix and seasoned however you like)
1/2 cup mayonnaise
1/2 cup milk (regular or buttermilk)

Preheat oven at 400 Fahrenheit.
Mix together your mayonnaise and milk and whisk together or blend with a fork.
Line a sheet or cookie pan with foil and lightly grease with either butter or olive oil non stick spray. Put cookie cooling racks on top of foil lined pans.
Take your lightly flour dusted chicken and dip into your milk-mayo mixture and then coat with crumbs. Repeat until all chicken is done.
Put the chicken on the racks and bake in a 400F oven for 25 minutes on one side. Flip the chicken and bake for 20-25 minutes on the other side or until done and cooked through.
