Got a call from a dear old friend today whom I haven't seen in a while. He was a regular at the house and around the table in my last home. He knows me well enough to invite himself for dinner. I let him know it was nothing fancy, for at the DO's request it'll be beef stew. It'll carry lots of veggies, including potatoes, herbs and spices, and is sure to carry a bit of kick. The DO even happened to make some fresh no-knead bread today which is always a treat. As we all have the day off tomorrow, the adult beverages are sure to flowing, and so this early (for me) post.
AG, nothing fancy in the batter really. Just flour, a bit of baking powder, salt & pepper, an egg, a touch of Old Bay, a little cayenne, and beer. (Sometimes dill, sometimes thyme; depends the mood). I let the beer get a bit flat, only because that's the way mom did it. The fish determines the thickness of the batter. The firmer white fishes (Cod and the like) tend to get thicker batter (controlled by the beer content) than the flounder. Crunchy fish that's moist and tasty and complete with fries is a treat.
