Both. It's a lot cheaper to buy a head of fresh cauliflower and put it in the Cuisinart. Many grocery stores now sell it fresh, already riced, and in a bag. My Kroger sells it that way but a small bag is $4 or $5. Trader Joe's fresh bagged one is more reasonable. With the fresh, I just saute in EVOO for a couple of minutes.

I've tried the frozen ones but they can be soggy. BUT, with a tasty sauce, you don't really taste the cauli. It soaks up the sauce and we like it. Gets soggy, just like rice. No carbs, either.

I agree about the Bischoff spread. Trader Joe's sells it labeled as Speculoos cookie butter. Yum!
