OK, I live in the boonies and don't get out much. Just bought something I have never seen before: 2 inch thick pork steaks. Gotta have some possibilities. My initial thought is large fry pan, sear and then long, slow. Spices of course. Just finished cooking a 4 lb. Beef Sirloin roast in the Instant Pot. Peppers, celery, onion, Pasilla, sumac. 54 min. high pressure. Beef you can cut apart with a fork. Wow.
