Italian Love Cake
2 Lb. Ricotta Cheese
3 eggs
1 Cup Sugar
2 tsp. vanilla
8 Os Cool Whip
1 cup Milk
1 Box Chocolate instant pudding
1 Box of Chocolate cake mix.
1. Grease a 9 x 13 pan
2. Prepare chocolate cake mix and pour into pan
3. Combine 2 lb. Ricotta, 3 eggs 1 cup sugar and 2 tsp. vanilla and mix ( I do this in a food processor and let it mix until Ricotta is smooth not grainy.
4. Pour Cheese mixture evenly over the cake batter in the pan.
5. Bake for 1 hour at 325. The cheese mixture will form a cake like layer on the bottom while baking.
6. Allow cake to cool in refrigerator
7. Topping: Combine Instant pudding mix and 1 cup of milk. Beat until thickened, and then fold into the cool whip.
8. When cake is cool, top with topping.
I serve it with chocolate syrup drizzled over it.
Some times I don't make the topping, but just top with chocolate whipped cream in a can and chocolate syrup. The topping is good though.
You can make this in a lemon flavor by subbing anything chocolate with lemon flavored things, like cake and pudding. It's good too.
