Chili Lime Marinade
Decided to make grilled boneless, skinless chicken thighs. They turned out amazing. Marinated them in pineapple and lime juice with fresh cilantro, garlic, cayenne, chipotle chili powder, cumin, coriander, brown sugar and fresh grated ginger, finely diced serrano chili pepper and lime zest. Grilled them until they had a nice crispy outside and served with rice and grilled orange and yellow bell peppers.
