Dinner was green tonight and it wasn't even St Pat's Day. Hilarious! I had bone in skin on chicken thighs, and leftover Herdez green salsa, what to do with it. Thinking I browned the thighs, removed from pan, drained off fat, added sauce, 1 small can of green chilies, hatch green chili powder, and my home ground jalapeno powder, thighs back in to simmer until done. Sauteed green onion, green pepper, celery, in a little butter, added leftover brown rice and a good amount of dried parsley, and steamed the last of the romanesco, which retains it's beautiful green color. It was all good, the sauce was nice and spicy, we both liked it. We also had wine. Green Grin!
