I use Julia Child's pie crust recipe modified a bit.
For one crust:
1 cup flour
3/4 cup COLD butter
2 T shortening ( I use 1 T shortning, and 1 T lard)
1 T sugar
pinch of salt (for quiche or pot pies 1 T salt, and pinch of sugar)
1/3 cup of ice water

Put first 5 ingredients into a food processor, and pulse until it chunks are about pea size. Pour in ice water and pulse until it forms a ball. Wrap in plastic bag and refrigerate for at least an hour, then roll out. Can make the day ahead and make pies the next day. Or Freeze and use when wanted later. It's really important to let the dough rest in the fridge for at least an hour.
