Dinner was what I call "Dean's London Broil", mashed potatoes, and steamed broccoli.

This is a very easy, dump-style dinner that's so good. Spray an oblong casserole. Cover bottom with sliced onion. Throw on a beef roast. (I use top round). Cover that with a mix of half tomato paste and half apricot preserves (I use sugar free). Seal with foil and roast in a 325 degree oven for 3 or 4 hours.

We have enough meat and sauce for another night.
