Regarding the size of Tolumnia Sniffen - most of the growth on this plant is just a bit past the mini stage.
About the Dendrochilum wenzelii - I find all my Dendrochilums easy to grow and the spikes emerge with the new growth. This one is about 10 - 12 inches high and can make a nice clump in a few years.
