The first one looks like it could be Agave desmettiana. It has such an elegant shape.
The second one - I would say - is definitely a Pineapple which is in the Bromeliaceae family...

Footnote: I went and googled Agave cimarron before ccompleting this reply and your post showed up on page one of the search. Nothing else helpful, by the way!!
