Thanks for the article! Of course it wasn't news to me living in the Mediterranean, where it grows abundantly in the summer time. I'm happy that this wonderful salad green is getting the recognition it deserves.
I got arthritis in my hands a few years ago, but the pain always goes from a 5 to a 1 during the months that I add purslane to my salad. This is one of our favorite recipes: Pick the leaves from the stalks leave the leaves whole but chop the stalks; add tomatoes, cucumbers, onions, feta cheese (optional) add olive oil, balsamic vinegar, salt and pepper. I can eat the whole bowl all by myself. Plus I'm pain free from May until October !
